Quick Oatmeal Raisin Protein Cookies

These cookies are so simple to make, packed full of protein, taste great and only take 10 minutes! Fresh, warm and soft cookies are great! People don’t often make them because they’re high in either fat, or sugar, or both. What’s more, each of these cookies only contain 100 calories each!

Makes: 10

Time: 20 minutes


  • 3/4 cup of oats
  • 1/4 cup of coconut flour
  • 3/4 cup of vanilla protein powder
  • 1 tbsp cinnamon
  • Pinch of sea salt
  • 1 packet of sweetener (stevia)
  • 1/3 cup of unsweetened applesauce
  • 3 egg whites
  • 1 tsp vanilla extract
  • 1/4 cup of raisins
  • 2 tbsp crunchy peanut butter


  1. Pre-heat oven to 375 degrees
  2. Coat a cookie sheet with non-stick cooking spray and set aside
  3. In a mixing bowl, combine the applesauce, egg whites, vanilla extract, raisins and peanut butter – mix well.
  4. In a seperate large mixing bowl, combine the oats, coconut flour, protein powder, cinnamon, salt and sweetener. Mix well.
  5. Add the dry ingredients to the bowl with the wet inigredients and stir until the mixture is well blended and a dough is formed.
  6. Scoop the dough into even portions onto the cookie sheet.
  7. Bake for 10 minutes.
  8. Remove cookie sheet and let set for 10 minutes before moving to a wire rack to cool.
